Fire and Desire (Cinnamon Rum Blackberry Chicken) Episode 3

 

INGREDIENTS: 1 pkg Applegate chicken strips 2½ cups blackberries 4 tbsp honey 3 tbsp chili powder   ¼ cup cinnamon rum 2 cups hot sauce ¼ cup brown sugar 1 pinch ground black pepper ¼ cup melted butter 1 scallion Zest from orange.

 

STEPS: Heat the Applegate grilled chicken strips in a non-stick skillet on medium until heated through (4-5 min). or deep fry in 2 cups of cooking oil (8-10 min). Chop scallion greens and set them aside. Puree berries, Cinnamon Rum, honey, spices, hot sauce, brown sugar, and pepper until smooth.  Blend the berry puree with melted butter. Place in a small pot and cook for 10 minutes on low heat. Set aside. Toss the cooked chicken in the berry puree until coated and then drain the excess juices.
